Overnight Oats

 

Whether you love them or hate them, oats and oatmeal can be used to make an easy and healthy meal. For this recipe we’ll be preparing Overnight Oats. One of my favorite parts about overnight oats is that they’re already prepared when I wake up. This is especially helpful on busy mornings (or if you may have hit that snooze button one too many times). Another benefit is that they can be prepared a few days in advance, so all your breakfast meals could be prepared for the week in one sitting. Of course the convenience is a nice touch to this quick meal, but oats and oatmeal are packed with nutrients. Harvard’s School of Public Health wrote an article on several of the health benefits of oats. Some major health concerns that were discussed were diabetes, heart disease, weight management, and digestive health. It was found that the primary soluble fiber in oats, beta-glucan, decreased blood cholesterol levels, helped prevent spikes in blood sugar levels after meals in people with diabetes, helped promote regularity in bowel movements and prevention of constipation. The Harvard article also discussed how it could affect weight control. They state how beta-glucan attracts water, thus increasing the viscosity (thickness) and volume of digested food making the consumer feel more full for longer (Oats, hsps.harvard.edu).
