A randomized controlled trial (RCT) demonstrated that chia seed consumption significantly reduced blood glucose, triglycerides, total cholesterol, and low-density lipoprotein cholesterol while increasing high-density lipoprotein cholesterol. Ingredients

(always look for organic, natural, local and/or wild sourced ingredients)

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any preferred milk)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Fresh fruits (e.g., berries, mango, banana) for topping
  • Nuts or seeds for additional crunch (optional)
Instructions
  1. In a medium-sized bowl, combine chia seeds, almond milk, honey, and vanilla extract.
  2. Stir well to ensure the chia seeds are evenly distributed.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight. Stir the mixture once or twice during the first hour to prevent clumping.
  4. Once the pudding has thickened, give it a good stir.
  5. Serve the chia pudding in individual bowls or jars, topped with fresh fruits and nuts or seeds if desired.
