Recipe Ingredients
  • 2 salmon fillets
  • 1 cup cooked green lentils
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 avocado, sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 375°F (190°C). Season salmon with salt, pepper, and a drizzle of olive oil.
  2. Bake salmon for 12–15 minutes, until cooked through.
  3. In a bowl, combine cooked lentils, mixed greens, cherry tomatoes, and avocado.
  4. Top with baked salmon.
  5. Drizzle with olive oil and lemon juice before serving.
