Ingredients
- 4 large bell peppers
- 1 lb lean ground beef (85–90%)
- 1 cup cooked rice or quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Optional: shredded cheese, parsley
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off peppers and remove seeds.
- Brown ground beef with onion and garlic in a skillet.
- Add cooked rice, tomato sauce, and seasonings.
- Stuff mixture into peppers and place in a baking dish.
- Cover with foil and bake for 30 minutes.
- Uncover, add cheese if desired, and bake 5–10 more minutes.
