Healthy Pumpkin Pie?!

It sounds hard to believe, but there are healthy ways to have pumpkin pie.  With the pumpkin spice craze that hits us towards the beginning of fall (although I feel fall starts earlier and earlier every year), people start breaking out their flannel, vests, boots, and start drinking their pumpkin spice lattes.  It may sound like blasphemy to some, but I am personally not a big fan of the pumpkin spice lattes.  Pumpkin pie is another story altogether.  It is one of my guilty pleasures every Thanksgiving.  I know we all can think of at least one unhealthy food that we eat even though we know it isn’t good for us.  Pumpkin pie is one of those for me.  I have at least limited it to once per year, but I have since found the pumpkin pie green smoothie.  It gives enough of the pumpkin pie flavor, yet it remains healthy and full of vitamins and nutrients.

Pumpkin itself is good for much more than just carving faces into.  As with most bright orange fruits and vegetables, it is high in vitamin A.  Along with lutein and zeaxanthin, which pumpkin also contains high amounts of, vitamin A helps promote healthy eyesight and decrease age-related macular degeneration.  Pumpkins are also high in vitamin C.  While helpful for our immune system, vitamin C is also good for wound healing.

I do want to stress one thing with this smoothie.  Make sure that you are using a non-dairy form of milk.  I use unsweetened coconut milk for mine, but I have seen some replacements with unsweetened almond milk as well.  Cow milk contains many inflammatory markers and causes systemic swelling through our body which can increase our degeneration and pain.

Every year, my family gathers together for Thanksgiving.  I am looking forward to bringing this recipe as a tasty (and healthy) to share with them.  I hope you and your family have a happy and healthy holiday as well!
