The Health Benefits of Cauliflower

If you are looking for a filling, vegetable-based meal, this soup is for you! Many of us struggle to get enough of our daily vegetables, but this soup is an easy way to get them all in at once. Additionally, this soup saves well and can be reheated for lunch later in the week. The roasted cauliflower brings out a sweetness that blends well with the savory herbs. If you are not going full vegan, or would like to indulge, feel free to shave some cheese on the top!
Cauliflower is often used as a vegan substitute in many recipes. Here, it provides the perfect combination with the white beans to form a hearty soup. Many vegetables are high in various nutrients and vitamins. Cauliflower is a great source of fiber, and B-vitamins. It also has antioxidants and other nutrients that help protect against cancer. All these nutrients help our immune and cardiovascular systems!

“It is concluded that a high consumption of brassica vegetables is associated with a decreased risk of cancer. This association appears to be most consistent for lung, stomach, colon and rectal cancer, and least consistent for prostatic, endometrial and ovarian cancer.”
